Ingredients:

1/2 tsp chopped garlic

2 cups cooked rice (preferably cold or a day old)

2 eggs

1 small onion, chopped

1/2 cup spring onions (white and green parts separated)

1 tsp soy sauce

1/2 tsp vinegar

Salt and pepper to taste

1 tbsp oil

  1. Beat eggs with a pinch of salt. Scramble them in a hot wok with oil. Set aside.
  2. In the same pan, heat oil and add garlic, onions, and the white part of spring onions. Sauté until soft.
  3. Add rice and toss well on high heat.
  4. Stir in soy sauce, vinegar, pepper, and salt.
  5. Mix in scrambled eggs and green onions. Stir for another 2–3 minutes and serve hot
