Experience the taste of North Indian dhabas at home with this authentic Indian daal fry. Made with toor dal, bold spices, and a fragrant tempering that brings comfort in every spoonful.

Ingredients:

Water as needed

1 cup toor dal (split pigeon peas)

1 medium onion, finely chopped

2 tomatoes, chopped

1 tsp cumin seeds

1 tsp ginger-garlic paste

2 green chilies, slit

1/2 tsp turmeric

1 tsp red chili powder

1 tsp garam masala

Salt to taste

2 tbsp ghee or oil

Fresh coriander for garnish

Instructions:

  1. Wash and pressure cook toor dal with 2.5 cups water and turmeric (2–3 whistles).
  2. Heat ghee in a pan. Add cumin seeds and let them splutter.
  3. Add onions and sauté till golden. Add ginger-garlic paste, green chilies, and cook for 2 minutes.
  4. Mix in tomatoes, chili powder, and salt. Cook until oil separates.
  5. Add cooked dal to the pan. Simmer for 5–7 minutes.
  6. Sprinkle garam masala, mix well, and garnish with coriander.
