Ingredients:
1/2 tsp chopped garlic
2 cups cooked rice (preferably cold or a day old)
2 eggs
1 small onion, chopped
1/2 cup spring onions (white and green parts separated)
1 tsp soy sauce
1/2 tsp vinegar
Salt and pepper to taste
1 tbsp oil
Instructions:
- Beat eggs with a pinch of salt. Scramble them in a hot wok with oil. Set aside.
- In the same pan, heat oil and add garlic, onions, and the white part of spring onions. Sauté until soft.
- Add rice and toss well on high heat.
- Stir in soy sauce, vinegar, pepper, and salt.
