Experience the taste of North Indian dhabas at home with this authentic Indian daal fry. Made with toor dal, bold spices, and a fragrant tempering that brings comfort in every spoonful.

Ingredients:
Water as needed
1 cup toor dal (split pigeon peas)
1 medium onion, finely chopped
2 tomatoes, chopped
1 tsp cumin seeds
1 tsp ginger-garlic paste
2 green chilies, slit
1/2 tsp turmeric
1 tsp red chili powder
1 tsp garam masala
Salt to taste
2 tbsp ghee or oil
Fresh coriander for garnish
Instructions:
- Wash and pressure cook toor dal with 2.5 cups water and turmeric (2–3 whistles).
- Heat ghee in a pan. Add cumin seeds and let them splutter.
- Add onions and sauté till golden. Add ginger-garlic paste, green chilies, and cook for 2 minutes.
- Mix in tomatoes, chili powder, and salt. Cook until oil separates.
- Add cooked dal to the pan. Simmer for 5–7 minutes.
- Sprinkle garam masala, mix well, and garnish with coriander.
